Aunt Jeanine’s Southern Pulled Pork – Paleo and Non Paleo Versions!

I first had this pulled pork at my cousin Jenna’s 5th birthday party a few years ago and had to have the recipe. After moving to Boston and buying my first slow cooker, I finally gave it a try.

Why it’s awesome – it’s simple and delicious. You can leave it in your crock pot all day, and when you come home it’s ready in about 45 minutes. And seriously, it’s delicious. Goes great with a side of yucca or greens, or with eggs and fruit for breakfast.

3-5 lbs pork shoulder

1 cup water

1/2 cup apple cider vinegar

1 cup seltzer (club soda)

4 TB McCormick Grill Mates Pork Rub

3/4 jar thick style Hot Bone Suckin’ Sauce (found at whole foods)

Place pork shoulder in slow cooker and add water, seltzer, vinegar, and 2 TB of pork rub. Cook 6-8 hours on high or 8-10 hours on low (time will depend on the amount of meat you’re cooking). Remove form slow cooker and shred with 2 forks, discarding undesirable pieces (like fat and bone). Mix in additional 2 TB of pork rub and BBQ sauce. Cover with foil and bake 35 minutes at 350 degrees. Remove foil for the last 10 minutes for a more charred outcome.

As a bonus, here are the original, non-paleo ingredients from my aunt. The directions are the same. Sometimes I still use the beer in place of the water and cider vinegar.

Original Ingredients

3-5 lbs pork shoulder

1 L Ginger ale

1 12 ounce beer (IPA has worked best)

4 TB McCormick’s Pork Rub

1 cup BBQ sauce (best with Jack Daniels No. 7 Sauce)
