Cuban Boiled Yucca

I have to give 100% credit for this one to my friend NikiĀ  and her family. I asked her for a good recipe for yucca last year and she came through with this gem. It takes about 45 minutes to make but is pretty easy and goes great with this pulled pork recipe.I’ve made this twice and it’s been an out of the park hit both times.

Ingredients

1 1/2 lb yucca, peeled and cut into halves

1 lime (juice from) or 3 Tb lime juice

1 tsp salt

6 garlic cloves

Brisket Style Pork Ribs

This recipe was inspired by my attempt to create my own dry rub. Let’s just say it didn’t work so well. Fortunately, Dad came to the rescue with a rub his friend and South Florida sports journalist Ralph Delacruz often used. From there I created a liquid base, got out the slow cooker, and came up with some pretty awesome ribs.

Ingredients

2 lbs St. Louis Style Ribs

1/4 cup cider vinegar

1 cup water

1 TB honey

Rub

1/2 TB garlic powder

1/2 TB lemon pepper

1/4 TB chili powder

1/2 TB paprika

Southern Fried Green Tomatoes

I first made fried green tomatoes back in high school when I saw the movie. This summer I decided to go at them again, this time with a Paleo twist. These are pretty high in fat and are fried, but they’re a great treat and are always a crowd pleaser.

Ingredients

3 medium green tomatoes

3/4 cup almond meal

1 tsp black pepper

1/4 tsp sea salt

1/8 tsp garlic powder

1/2 tsp basil

1/2 tsp oregano

Easy Paleo Pancakes

Ingredients

2 eggsphoto-3

1 TB water

1 TB honey

2 tsp vanilla

1/2 cup almond flour

1/2 cup flax seeds (golden)

1/4 tsp baking soda

1/4 sea salt

Coconut oil

Whisk together first 4 ingredients. Gradually add to mix of dry ingredients. Melt coconut oil over medium heat. Cook pancakes until done all the way through. Should make 4 small – medium sized pancakes.

Aunt Jeanine’s Southern Pulled Pork – Paleo and Non Paleo Versions!

I first had this pulled pork at my cousin Jenna’s 5th birthday party a few years ago and had to have the recipe. After moving to Boston and buying my first slow cooker, I finally gave it a try.

Why it’s awesome – it’s simple and delicious. You can leave it in your crock pot all day, and when you come home it’s ready in about 45 minutes. And seriously, it’s delicious. Goes great with a side of yucca or greens, or with eggs and fruit for breakfast.

IngredientsĀ 

3-5 lbs pork shoulder

1 cup water

1/2 cup apple cider vinegar

1 cup seltzer (club soda)

4 TB McCormick Grill Mates Pork Rub

3/4 jar thick style Hot Bone Suckin’ Sauce (found at whole foods)
