Cuban Boiled Yucca

I have to give 100% credit for this one to my friend NikiĀ  and her family. I asked her for a good recipe for yucca last year and she came through with this gem. It takes about 45 minutes to make but is pretty easy and goes great with this pulled pork recipe.I’ve made this twice and it’s been an out of the park hit both times.


1 1/2 lb yucca, peeled and cut into halves

1 lime (juice from) or 3 Tb lime juice

1 tsp salt

6 garlic cloves

1/3 cup lemon juice

1/2 cup olive oil

1/2 onion, chopped fine

Place yucca in a sauce pan, add water until yucca is just covered. Add lime juice and salt and bring to a boil. Reduce heat, cover, and simmer until tender, about 30 minutes. Drain and remove “woody” or fibrous core from the center of the yucca. Mash garlic cloves into salt with mortar and pestle and add to lemon juice, onions, and olive oil in a separate pan.

Heat until bubbling and pour over yucca. Toss yucca and sauce lightly, while continuing to saute over medium heat. Heat until barely browned but not crisp.
