1 cup almond flour + coconut flour (I used 1/2 cup each)
1/2 tsp baking soda
1/4 cup grass fed butter (1/2 stick)
1 banana, mashed
6 dates, chopped fine
1/2 tsp vanilla extract
1/2 cup chocolate chips
Combine flours, baking soda, and salt in a small bowl and set aside. Beat together butter, mashed banana, and vanilla. Add in dates and beat until well mixed in (they won’t blend completely in but should be in small enough chunks). Add in egg and beat, then beat in the flour mix. Fold in chocolate chips. Grease a baking sheet and place spoonfuls of dough evenly on the sheet. Bake for about 12-15 minutes at 350 degrees.
