Southern Fried Green Tomatoes

I first made fried green tomatoes back in high school when I saw the movie. This summer I decided to go at them again, this time with a Paleo twist. These are pretty high in fat and are fried, but they’re a great treat and are always a crowd pleaser.


3 medium green tomatoes

3/4 cup almond meal

1 tsp black pepper

1/4 tsp sea salt

1/8 tsp garlic powder

1/2 tsp basil

1/2 tsp oregano

1 egg

Olive or coconut oil

Slice tomatoes to medium-thickness. Combine dry ingredients on a plate or flat surface and mix well. Whisk egg in a bowl. Heat oil in pan over medium heat. Dip tomato slices in egg, then coat with dry mix, and add to pan. Cook until al dente and browned on the outside. You should be able to easily stick a fork through the slice, but it should not be soft.
